Garden State Fresh

What does the word fresh mean to you? When discussing food, would it be fair to think of fresh as something natural? Something recently picked, harvested, caught?

Merriam-Webster uses the following to define fresh:

having its original qualities unimpaired, not altered by processing, not salt, free from taint

Is Starkist fresh? What about Campbell’s? Is there anything packaged in a can you would consider fresh?

I know that some foods are packaged when they are fresh. Heck, some foods are frozen when they are fresh.

I suggest, however, that we (at least I) think of vegetables picked from the vine, fish caught at sea, etc. under the heading fresh.

New Jersey, the Garden State, has promoted its farm products over the last several years with the Jersey Fresh motto. Much like the state lawmakers who classified the tomato as the official state vegetable, the folks in Trenton have re-defined fresh.

Jersey Fresh Crushed Canned Tomatoes have just gone on sale under a partnership of farmers, a grocery chain, a packing company and a distributor. The 28-ounce cans are on sale in Super Foodtown markets in Middlesex, Monmouth and Ocean counties. Later, they’ll be more widely distributed.

So much for the Jersey Fresh program. This campaign will certainly confuse normal folks who do not expect fresh products to require a can opener.
