Sweet Potato Chips
Yummy!
Mom used to try sweet potatoes on us. I would have none of it. I would not eat them.
Nothing changed as I grew older. It is true I added asparagus and a few other foods that I had spurned as a youngster in adulthood. But sweet potatoes was still outside the circle of trust.
Several years ago a student brought me a sweet potato pie. Surprisingly, it was good. Nevertheless, it still did get them on my plate.
Then a funny thing happened. We had a baby. Okay, that wasn’t funny, but she can be. Anyhow . . . when it came time for her first food that wasn’t from my wife’s breast, it was a jar of sweet potatoes. She loved them. She ate a lot of them over the next six months.
That seemed to set the stage for us. Gert saw a recipe for something and it suggested sweet potatoes to accompany the dish. She prepared it and we were both quite surprised as to how good they were. Beetle, of course, already knew that.
We now eat sweet potatoes regularly. While sometimes a pat of butter is used, most of the time I eat them plain as they are rich enough without being “spruced” up.
A few weeks ago my blue hairs (the ladies on a cooking discussion board I frequent) had a thread about sweet potato chips. They sounded wonderful. I picked up a couple sweet potatoes and tonight, armed with my mandolin, made chips. I had no olive oil (I will have to rectify that), so I used vegetable oil and then sprinkled some Essence on top. I knew I should have kicked it up with some of our spicy seasonings, but wanted to test them first.
I baked the chips at 450°F for 12 minutes on one side and then flipped them. I baked about five minutes on the other side. Next time I will probably bake at 350°F for about the same length of time. The chips on the edge of the baking sheet were done to a crisp. THe ones in the middle were perfect.
My these were tasty! I could have easily eaten three times as many chips. These were awesome! I wonder if instead of olive oil/vegetable oil if I could use cooking spray. Less expensive and I bet I would use less product thus keeping the calories down.

Some restaraunt we were at served us sweet potato fries with marshmallow fluff to dip them in.
I enjoyed them so much that I stole that idea for Thanksgiving.

Lots of folks serve sweet potaotoes that way. It seems to counteract what is “good” about sweet potatoes, however.
